Middle school kids all have different opinions and they will usually let you know what they are, which is why I definitely suggest sending the whole list of ideas to your middle schoolers and letting them pick (unless you are the art teacher or work extended school day).
But my middle school daughter approved all of these ideas and did many of them the first time herself, so I know that at least one middle schooler approves of these middle school Thanksgiving activities.

Middle school aged kids may roll their eyes at craft time, but in reality, many of them still really enjoy making crafts!
